Honest To Goodness Minestrone Soup

If you’ve ever thought Minestrone soup was complicated to make, try this simple and classic crock pot Minestrone. The ingredients are mostly pantry items.  I usually have most of the items on hand, but I make sure that I buy small, fresh zucchini and carrots.  I don’t like to use baby carrots in most soup recipes.  Baby carrots are fine for snacking, but I think the regular, full sized carrots have more flavor.  But, like any great recipe for Minestrone, the real flavor is in the herbs.  Don’t skimp on the oregano or basil and be sure your herbs are not old.

This is one of those great crock pot recipes to make a day ahead of time, like when you know you’re going to have one of those hectic nights driving kids around after school and between activities.  Then, when you get home, just cook up the macaroni, add it and the Parmesan cheese according to the recipe.  Heat through and dinner is ready in minutes!   Now you can get on with the evening… you know, all those glorious things like homework, baths, and stories.  Then, maybe if you’re not too exhausted, a little time for Mom and Dad.
